Eat like a player crusted lamb

For any parents struggling to get your youngsters to eat healthily, what better way to get them to eat the same food their heroes enjoy after a tough training session? Hope you enjoy the latest recipe....

Crusted rack of lamb with new potatoes

Ingredients: (serves four)

4 racks of lamb
200ml honey
200g pistachios
800g new potatoes
Small bunch of chives
1 onion
2 large carrots
300g curly kale

Method:

Seal off your racks of lamb on all sides in a hot pan, whilst warming the honey in a separate pan. When sealed, dip the fat side of the lamb into the honey before covering with crushed pistachios.
Place the now crusted lamb into the oven for 14 minutes at 180 degrees (gas mark 6) for a medium rare finish, but longer depending on how you like it. Rest the meat for as long as you have cooked it.
Boil the new potatoes for 20 minutes before crushing them, add a sautéed onion and finely chopped chives to the mix, before put into a 2inch ring to make the cake.
Cut the carrots into batons and steam for six minutes. Then take the stalk out of the kale before plunging into boiling water for 20 seconds. Cut the meat down the middle and present exactly as it is in the  picture above.

Why we cook this dish:

The rack of lamb is a lean cut of meat, so it is a healthy option. The potatoes provide carbohydrates for the players’ energy, and the other vegetables are obviously very good for you, too.
